      Speaking of which, here’s a tip for passover: regardless of the recipe for latkes that you use, don’t throw out the oil. Just leave it in the frying pan for a few days, adding a little more oil each time you fry up a new batch of them. The potato pancakes will just keep getting better and better.

      Another hint: try using sesame oil instead of the usual crisco or canola oil (Never use olive oil – latkes aren’t about “health”). Sesame oil adds hellacious depth and savour to your potato pancakes. You can also throw a couple of tablespoons of sesame flour (I make it by dumping sesame seeds into my coffee grinder and pulverizing them into powder) into your potato pancake batter. Yum.

        i am fairly certain that the regular year round latkes are chametz… or at the very least (ugh) Kitniyot

        If you’re observant, the only thing you need to remove from latkes to be sure to make them kosher for Passover is chametz flour, ie, wheat, barley, spelt or rye, if you use any in your recipe. Oats are still in dispute. Ashkenazi usually include them in the list of banned grains, even though they were not present in Israel at the time of the codification of the Pesach kashruth and are not related to wheat, rye or barley. Many Sephardim don’t ban oats (and Sephardim generally don’t worry about kitniyot either). Some folks never use it (I do). You would need to up the egg content of the latkes batter and grate the potatoes more finely or use potato flour in the mix to help hold the batter together while frying, though. Technically, of course, if you use no water in the mixture and/or fry the latkes within the eighteen-minute limit, you can use chametz in the mixture anyway, since they would not be considered leavened. Potatoes are neither chametz nor kitniyot (leguminous vegetables), have been cleared numerous times in various responsa, so they’re OK across the board. I believe onions are also in the clear.
